Come celebrate with us for the release of our Tall Ships Festival Limited-Release Rum Barrel Cider!

 

Here at Captain’s Walk Winery, we are very excited to be releasing our newest cider, specifically for Tall Ships Festival, our Rum Barrel Cider on Thursday, July 25th from 4-7pm!

Impressions from our cider maker:

Tall Ships Fest Limited-Release Rum Barrel Cider is a micro batch produced hard apple cider aged in four freshly dumped rum barrels from Great Lakes Distillery. There the cider develops enhanced olfactory characteristics and complex flavors merry. Aromas of apple compote, maple syrup and brown sugar greet the nose. Smooth vanilla and toffee notes complement the flavor of a proprietary blend ripe Kewaunee County apples. This cider is as special as this unique maritime gathering of these sailing vessels.

If a pale ale and a cider had a love child this would be it. A cold hopped hard apple cider loaded with pronounced citrus and grapefruit aromas. Chock full of tropical fruit, gooseberry and apple flavors, finishing like an IPA.

 

At the release party, you will enjoy a complimentary tasting of our Citra Hopped cider, free appetizers and discounts on growler* fills and glasses of Citra Hopped.

If you have been enjoying our hard ciders from the beginning, then we are excited to release this limited batch for you! While visiting, be sure to taste some of our other ciders on tap. Captain’s Walk Limited Release Ciders, such as our Citra Hopped, are experimental batches that allow the taster to experience small, regional flavors. You won’t find these ciders anywhere else. Since our batches are so small, we only serve our hard cider on tap. You can always take home a growler, but they are not available in a bottle or can. That means they haven’t spent time bouncing around in a truck. They are fermented in our cellars and served right upstairs. They sell out quickly, which is fun for us! We get to consistently create new batches for you to experience.

Chaider Release Party

Come celebrate with us the release of our newest hard cider – Chaider!

Chaider a semi-sweet cider made with our 2017 proprietary blend of Northeast Wisconsin grown apples. It is slowly infused with Chai spices, a mixture of aromatic Indian spices. Fresh ginger root, black tea, cardamon, cinnamon, cloves and peppercorns. It can be enjoyed cold and fresh or warmed as a latte.

 

At the release party, you will enjoy a complimentary tasting of our Chaider,  free appetizers and discounts on growler fills and glasses of Chaider. We will be serving the Chaider warm and available as a latte!

Door County Cherry Cider Release

Door County Cherry Juice + Kewaunee County Hard Apple Cider + One Brandy Barrel

 

Three elements of flavor have been combined for a smooth and sweet concoction that’s sure to please: Door County Cherry Juice, hard apple cider made from Kewaunee County apples, and a Brandy Barrel. Partake in our party to celebrate the tapping of these barrels on Thursday, April 27th from 4-7pm.

Note the impressions left on our winemaker: This cherry infused hard apple cider was aged in a barrel that previously matured a potent brandy fortified cherry wine. Smooth and delicious, just like a Wisconsin Old Fashioned cocktail. Lightly sweet and effervescent, with bold notes of cherry pie.

The barrel had a long road to get to aging our hard cider. Chardonnay, Cabernet Sauvignon, and Cherry Bounce have all taken residence in this particular quartersawn masterpiece (barrel).

Thursday, March 30th from 4-7pm.

Come toast the release of our newest hard cider – a whiskey barrel hard peach cider. That’s a lot to say, but the cider offers a mouthful of flavors!

The whiskey barrel peach is a blend of both peach and Wisconsin apple ciders. Aged in freshly emptied Kentucky Bourbon whiskey barrels, to bring out enhanced rich flavors of peach jam, vanilla, cinnamon and smoke.  Full bodied and warm, with intense notes of honey.

 

We obtained these barrels from a broker connected to Old Forester. So if you’re a bourbon aficianado, try to identify those characteristics in our cider.

Captain’s Walk Winery is excited to announce that it will be hosting a very limited and unique wine dinner this coming April with the support and partnership of the Black and Tan restaurant!
The night is set to be an exciting five-course wine dinner involving a variety of excellent wines from Captain’s Walk paired with the delicious entrees of Black and Tan. Chef Aaron has created this menu which will highlight the flavors of the downtown Green Bay winery’s offerings.

 

Charcuterie and citrus ceviche. Pairing: Sauvignon Blanc, Captain’s White, Hard Apple Cider

Salad including watercress, beets, sorrel, fennel, cucumber, apple, pear, smoked
blue cheese, candied walnuts and heirloom tomatoes.  Pairing: Marquette Rose

Duck breast with smoked parsnips and roasted root vegetables with a glace de canard  Pairing: 2012 Merlot

NY Strip, au poivre, with roasted mushroom, cauliflower, fingerling potatoes and demi glace.  Pairing: 2012 Cabernet

Handmade raspberry cream chocolate truffles and Captain’s Mistress port wine filled chocolates. Pairing: Captain’s Mistress

The dessert will be crafted by Captain’s Walk Winery’s very own chef and paired with the rare opportunity of a barrel tasting in the cellar!


This event is not one that you’re going to want to miss. The seating will be limited to 40 people for the event (with seating arrangements grouped by 4 individuals per table.)

Introducing Captain’s Walk Hard Cider!

Hard CiderHard cider is now available at Captain’s Walk Winery. Our vibrant hard cider is made with Kewaunee grown apples and is offered in two varieties—Door County Cherry and Wisconsin Maple. Our Door County Cherry is made with a hint of local Door County montmorency cherries gives a nice subtle balance of sweet to tart. This is Wisconsin in a glass. It is very aromatic with that touch of cherry at the finish. Our Wisconsin Maple has a touch of local 100% pure maple syrup and brown sugar. Sweet and warming for a winter day!

Did you know that a brewery can’t make hard cider without a winery license? You’ll often find plenty of beer with apple flavoring in 12 ounce bottles on the store shelf. Don’t let that fool you! Real hard cider is made from apples by a winery. Ours is made from apples grown on the door peninsula at Hillside Apples. For a true hard cider, come in and try ours.

Hard Cider is best fresh, and doesn’t need time to age. That’s why ours is served out of a keg. The bad news is that you can’t get it in a bottle. The good news is that you can get it on tap in a glass, or we’ll put a half-gallon into a beer growler for you to take home!

Enjoy a 6oz pour at the winery for only $3.00. Carry out growlers are $20.00 for the first fill and $15.00 for refills of the same growler.
